Apple And Celery Salad Recipe - Cooking Index
Wonderfully tart, crunchy and refreshing. A nice light touch with such a filling meal.
Courses: Salads| 2 | Granny Smith apples - cored, and thinly sliced | |
| 2 | Celery ribs - thinly sliced on the diagonal | |
| 6 | Radishes - thinly sliced | |
| 1/4 | Red cabbage - shredded | |
| 3 | Scallions - thinly sliced on the diagonal | |
| 1 | Fresh cayenne pepper - thinly sliced, (optional) | |
| Juice of 2 lemons | ||
| 1/4 cup | 59ml | Olive oil |
| 1 | Mint - stemmed, and roughly chopped | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
Place everything in a large bowl and toss gently to combine. Serve at once.
