Spinach Salad With Bell Peppers And Herb Dressing Recipe - Cooking Index
1/2 teaspoon | 2.5ml | Red bell pepper (medium) |
1/2 teaspoon | 2.5ml | Yellow bell pepper (medium) |
6 cups | 240g / 8.5oz | Spinach leaves - (medium packed) |
1 1/2 tablespoons | 22ml | Extra-virgin olive oil |
2 1/4 teaspoons | 11ml | Herb vinegar |
1/4 teaspoon | 1.3ml | Dried thyme |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Cut peppers in strips about 1/3-inch wide; cut in half if long. Combine with spinach in a large bowl.
In a small bowl, whisk oil with vinegar and thyme. Toss with spinach and bell peppers. Season to taste with salt and pepper.
This recipe yields 4 servings.
