Red Pepper Bruschetta With Feta Recipe - Cooking Index
Traditional bruschetta is an Italian workman's midday snack of thickly sliced country bread rubbed with garlic cloves and drizzled with olive oil. This simple American version is easy to prepare and is topped with a tasty mixture of roasted peppers, green onion, and Athenos feta cheese.

1 | Garlic clove - minced | |
Olive oil - as needed | ||
1 teaspoon | 5ml | Lemon juice |
1/4 cup | 15g / 0.5oz | Chopped green onions |
1 | Athenos Crumbled Feta Cheese - (4 oz) - finely chopped | |
1 | French bread loaf - cut 1/2" slices |
Mix peppers, garlic, 1 tablespoon olive oil, juice, onions, and feta cheese. Set aside.
Brush bread slices lightly with olive oil; place on cookie sheet. Broil on each side until lightly toasted.
Top each toast slice with about 1 tablespoon of pepper mixture.
NOTE: Bread slices can also be lightly toasted on cool portion of grill.
This recipe yields about 1 1/2 dozen.
