Lemon Spice Puffs Recipe - Cooking Index
3/4 cup | 177ml | Milk - scalded and cooled |
6 tablespoons | 90ml | Granulated sugar - pius |
1 tablespoon | 15ml | Granulated sugar - (divided use) |
1 teaspoon | 5ml | Salt |
5 tablespoons | 75ml | Butter |
1 tablespoon | 15ml | Grated lemon peel |
1 teaspoon | 5ml | Lemon juice |
2 | Eggs - beaten | |
1 | Yeast - dissolved in | |
1/4 cup | 59ml | Water |
3 cups | 187g / 6.6oz | Flour |
1 tablespoon | 15ml | Cinnamon |
Combine all ingredients except flour, cinnamon, and 1 tablespoon sugar in mixer bowl. Add the flour 1 cup at a time, beating well after each addition. Cover bowl with towel and let rise until double, about 1 1/2 hours.
Grease 18 muffin cups. Combine cinnamon and sugar.
Punch dough so it deflates and let rest for 10 minutes. Divide dough among prepared muffin cups and sprinkle with cinnamon sugar. Cover with towel and let rise until double, about 1 hour.
Preheat oven to 375 degrees. Bake puffs about 20 minutes until light brown. Turn out on rack to cool.
This recipe yields 18 puffs.
