Sweet Potatoes With Apple

A camping friend brought this to the cookbook author's brunch one day, and everyone liked it. This is sweet and tasty without added sugar.

Recipe Ingredients

3 teaspoons 15mlApples - thinly sliced (large)
1 tablespoon 15mlLemon juice
1 1/2 lbs 681g / 24ozSweet potatoes - peeled, sliced
  = (long narrow ones if available;
  Halved lengthwise if round)
1 tablespoon 15mlReduced-calorie margarine
1/4 cup 59mlApple juice or sweet cider

Recipe Instructions

Coat apple slices with lemon juice.

Spray a casserole with nonstick vegetable cooking spray. Layer potatoes and apples in casserole. Arrange the top in a pinwheel design.

Dot with margarine. Pour juice overall all. Cover. Bake at 350 degrees for about 45 minutes.

Uncover and bake for about 15 minutes or until potatoes are done.

This recipe yields 8 servings. Serving size: 1/2 cup.
