Field Peas Recipe - Cooking Index
2 cups | 474ml | Water |
8 oz | 227g | Fresh chicken or turkey necks |
1 oz | 28g | Onion - chopped (medium) |
1 | Garlic clove - minced | |
1 teaspoon | 5ml | Parsley |
1 lb | 454g / 16oz | Fresh or frozen field peas |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Red pepper flakes |
Freshly-ground black pepper - (optional), to taste |
In a large stockpot, boil the water. Add the chicken or turkey necks, onion, garlic, and parsley and boil for 15 minutes.
Add the field peas and cook until tender, about 30 minutes. Add the salt, pepper flakes, and pepper. Serve over steamed rice.
This recipe yields 6 servings. Serving size: 1 cup.
