Crabmeat Au Gratin

Recipe Ingredients

2 tablespoons 30mlReduced-fat margarine
1/2   Green bell pepper - seeded, minced
1/2   Onion - chopped (medium)
3 tablespoons 45mlFlour
2 cups 474mlFat-free (skim) milk
2 cups 125g / 4.4ozCrabmeat - flaked, and
  Shell pieces removed
1/4 teaspoon 1.3mlSalt
1   Nutmeg
1/2 cup 73g / 2.6ozShredded reduced-fat cheddar cheese
1/4 cup 36g / 1.3ozDried breadcrumbs

Recipe Instructions

Heat the oven to 350 degrees.

Melt the margarine in a large skillet and saute the bell pepper and onion for 2 minutes. Add the flour, milk, crabmeat, salt, and nutmeg. Cook for 10 minutes.

Pour the crabmeat into a shallow nonstick baking dish. Sprinkle with shredded cheese and breadcrumbs. Bake until the cheese browns, about 20 minutes.

This recipe yields 6 servings. Serving size: 1/2 cup.
