Carrots With Coriander Recipe - Cooking Index
Carrots are full of flavor without any garnishes, but here's a way to make them company-special without too much fat or sodium.
Type: Vegetables1 lb | 454g / 16oz | Carrots - sliced |
1 teaspoon | 5ml | Vegetable oil |
1 teaspoon | 5ml | Ground coriander |
Juice of 1/2 lemon | ||
1/4 cup | 59ml | Water |
Chopped fresh cilantro or parsley - as garnish |
Saute carrots in oil in nonstick pan until golden.
Add coriander, lemon juice, and water. Bring to a boil and simmer until carrots are tender-crisp. Watch this carefully; carrots burn easily if the heat is too high.
Garnish. Serve
This recipe yields 4 servings. Serving size: 1/2 cup.
