Antipasti Salad

Recipe Ingredients

1/2 lb 227g / 8ozZiti pasta
3 cups 711mlWater
1/2   Green bell pepper - diced
1/2 tablespoon 7.5mlCrushed garlic
2 oz 56gFeta cheese
2 tablespoons 30mlExtra-virgin olive oil
1/4 tablespoon 3.8mlRed onion - diced (small)
1/2   Red bell pepper - diced
  Freshly-ground black pepper - to taste
5 tablespoons 75mlBalsamic vinegar

Recipe Instructions

Bring the water to a boil in a large pot. Add the ziti pasta and stir to prevent the pasta from sticking. Cook for 10 to 12 minutes, or until the pasta is done. Drain the water, then cover the pasta with cold water to cool.

Once the pasta has cooled, drain the water. Add the remaining ingredients to the pasta and mix well. Refrigerate for 1 hour, mix again, and serve.
