White Mushroom Salad With Parmesan Shards

Recipe Ingredients

2 cups 474mlSliced white mushrooms
1/2 cup 55g / 1.9ozSliced celery
1/2 cup 118mlSliced roasted red bell pepper
1/4 cup 59mlBalsamic vinegar
1 tablespoon 15mlLemon juice
2 teaspoons 10mlOlive oil
2   Garlic cloves - finely minced
  Fresh Parmesan cheese shards

Recipe Instructions

Combine the mushrooms, celery, and pepper in a salad bowl.

Whisk together the vinegar, lemon juice, oil, and garlic. Pour over the salad, and let the salad sit for 1/2 hour.

Serve the salad on individual plates. Top each serving with Parmesan shards.

This recipe yields 6 servings. Serving size: 1/2 cup.
