Quick Turkey Salad Sandwich

Roasted turkey breast is wonderfully low in fat, but high in flavor. Here it's spiced up with red onion and balsamic vinegar.

Recipe Ingredients

3/4 oz 21gRoasted turkey breast
1 tablespoon 15mlFat-free sour cream
1 teaspoon 5mlReduced-fat mayonnaise
1/2 tablespoon 7.5mlChopped red onion
1/4 teaspoon 1.3mlBalsamic vinegar
  Salt - to taste
  Freshly-ground black pepper - to taste
1   Dried rosemary leaves
  = (or 1/4 tspn fresh rosemary)
1/2   Oat bran English muffin - toasted

Recipe Instructions

Cut the turkey into very small bite-sized pieces. Set aside.

In a small bowl, stir together the sour cream, mayonnaise, onion, vinegar, salt, pepper, and rosemary. Stir in the turkey.

Mound the mixture on an English muffin half.

This recipe yields 1 serving.
