Pumpkin Mousse

2 cups 474mlCanned pumpkin
  = (not pumpkin pie filling)
1 tablespoon 15mlHoney
2 teaspoons 10mlCinnamon
2 teaspoons 10mlGrated lemon peel
1 cup 146g / 5.1ozPart skim ricotta cheese

Recipe Instructions

In a medium bowl, combine the pumpkin, honey, cinnamon, and lemon peel. Mix well. Fold in the ricotta cheese. Refrigerate for 1 hour and serve.

This recipe yields 6 servings. Serving size: 1/2 cup.
