Mini Breakfast Quiches Recipe - Cooking Index
4 oz | 113g | Diced green chilies |
2 oz | 56g | Diced pimentos - drained |
3 cups | 480g / 16oz | Precooked white rice |
2 | Egg substitute equivalents | |
1/3 cup | 78ml | Skim milk |
1/2 teaspoon | 2.5ml | Cumin |
1 | Salt | |
1 | Freshly-ground black pepper | |
1 cup | 146g / 5.1oz | Low-fat cheddar cheese |
Preheat the oven to 400 degrees. In a large mixing bowl, combine all ingredients except 1/2 cup of the cheese.
Spoon mixture evenly into muffin cups and sprinkle with remaining cheese. Bake for 12 to 15 minutes or until set. Carefully remove the quiches from the pan, arrange on a platter, and serve.
This recipe yields 12 servings. Serving size: 1 muffin cup.
