Cucumber Dill Dip

1/2   Cucumber - peeled, seeded, (medium)
  And finely diced
3/4 cup 177mlLow-fat sour cream
2 tablespoons 30mlPlain low-fat yogurt
1/4 cup 59mlLite mayonnaise
2   Garlic cloves - minced
2 tablespoons 30mlMinced shallots
1 tablespoon 15mlMinced fresh dill
2 teaspoons 10mlMinced parsley
1/2 teaspoon 2.5mlMinced thyme
2 teaspoons 10mlApple cider vinegar

Recipe Instructions

Combine all ingredients by hand until smooth. Serve with raw vegetables or crackers.
