Creamy Tarragon Asparagus

Recipe Ingredients

2 1/2 lbs 1135g / 40ozFresh asparagus - ends snapped off
1/2 cup 118mlLow-fat sour cream
1/4 cup 36g / 1.3ozParmesan cheese
1 tablespoon 15mlLow-fat mayonnaise
1 tablespoon 15mlTarragon
1 tablespoon 15mlLemon juice
1/2 cup 118mlEvaporated fat-free milk
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Rinse the asparagus and pat dry. Steam the spears in an asparagus steamer or in a metal steamer over boiling water for 8 minutes until tender-crisp.

Meanwhile, combine all remaining ingredients in a saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. Pour the sauce over the asparagus and serve.

This recipe yields 6 servings. Serving size: 1/2 cup.
