Creamy Tarragon Asparagus Recipe - Cooking Index
2 1/2 lbs | 1135g / 40oz | Fresh asparagus - ends snapped off |
1/2 cup | 118ml | Low-fat sour cream |
1/4 cup | 36g / 1.3oz | Parmesan cheese |
1 tablespoon | 15ml | Low-fat mayonnaise |
1 tablespoon | 15ml | Tarragon |
1 tablespoon | 15ml | Lemon juice |
1/2 cup | 118ml | Evaporated fat-free milk |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Rinse the asparagus and pat dry. Steam the spears in an asparagus steamer or in a metal steamer over boiling water for 8 minutes until tender-crisp.
Meanwhile, combine all remaining ingredients in a saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. Pour the sauce over the asparagus and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
