Sweet Potato Pound Cake Recipe - Cooking Index

1 cup | 198g / 7oz | Sugar |
1 cup | 160g / 5.6oz | Brown sugar |
2 1/2 cups | 592ml | Mashed cooked sweet potatoes |
1 cup | 198g / 7oz | Egg substitute |
2 teaspoons | 10ml | Vanilla |
3 cups | 187g / 6.6oz | Flour |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Baking soda |
2 teaspoons | 10ml | Butter-flavored extract |
1 teaspoon | 5ml | Nutmeg |
1 teaspoon | 5ml | Cinnamon |
Heat the oven to 350 degrees. Cream the margarine and sugars in a large bowl until fluffy. Add the sweet potatoes, egg, and vanilla and beat for 2 minutes.
Add the remaining ingredients and mix well. Pour the batter into a nonstick loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.
This recipe yields 12 servings. Serving size: 1 slice.
