Sweet Potato Pound Cake

Recipe Ingredients

1 cup 198g / 7ozReduced-fat margarine
1 cup 198g / 7ozSugar
1 cup 160g / 5.6ozBrown sugar
2 1/2 cups 592mlMashed cooked sweet potatoes
1 cup 198g / 7ozEgg substitute
2 teaspoons 10mlVanilla
3 cups 187g / 6.6ozFlour
1 teaspoon 5mlSalt
1 teaspoon 5mlBaking soda
2 teaspoons 10mlButter-flavored extract
1 teaspoon 5mlNutmeg
1 teaspoon 5mlCinnamon

Recipe Instructions

Heat the oven to 350 degrees. Cream the margarine and sugars in a large bowl until fluffy. Add the sweet potatoes, egg, and vanilla and beat for 2 minutes.

Add the remaining ingredients and mix well. Pour the batter into a nonstick loaf pan and bake for 1 hour or until a toothpick inserted in the center comes out clean.

This recipe yields 12 servings. Serving size: 1 slice.
