Sweet Pepper And Onion Saute Recipe - Cooking Index
This recipe is a veritable rainbow of colors. All bell peppers, named for their bell shape, have a mild sweet flavor and crisp, very juicy flesh.
Type: Vegetables1 tablespoon | 15ml | Extra-virgin olive oil |
1 tablespoon | 15ml | Yellow bell pepper - cored, seeded, (small) |
And thinly sliced | ||
1 | Red bell pepper - cored, seeded, (small) | |
And thinly sliced | ||
1 | Green, orange or purple bell pepper - cored, seeded, (small) | |
And thinly sliced | ||
1 | Onion - cut thin wedges (large) | |
1 | Garlic clove - minced | |
1/4 teaspoon | 1.3ml | Salt |
Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the peppers and onion; stir-fry 3 minutes.
Add the garlic; continue to stir-fry 2 to 3 minutes longer, or until the vegetables are crisp-tender. Sprinkle with salt.
This recipe yields 4 servings. Serving size: 1/2 cup.
