Sweet Pepper And Onion Saute

This recipe is a veritable rainbow of colors. All bell peppers, named for their bell shape, have a mild sweet flavor and crisp, very juicy flesh.

Recipe Ingredients

1 tablespoon 15mlExtra-virgin olive oil
1 tablespoon 15mlYellow bell pepper - cored, seeded, (small)
  And thinly sliced
1   Red bell pepper - cored, seeded, (small)
  And thinly sliced
1   Green, orange or purple bell pepper - cored, seeded, (small)
  And thinly sliced
1   Onion - cut thin wedges (large)
1   Garlic clove - minced
1/4 teaspoon 1.3mlSalt

Recipe Instructions

Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the peppers and onion; stir-fry 3 minutes.

Add the garlic; continue to stir-fry 2 to 3 minutes longer, or until the vegetables are crisp-tender. Sprinkle with salt.

This recipe yields 4 servings. Serving size: 1/2 cup.
