Lemon-Roasted Asparagus Recipe - Cooking Index
2 lbs | 908g / 32oz | Fresh asparagus - trimmed |
2 tablespoons | 30ml | Butter - melted |
4 tablespoons | 60ml | Fresh lemon juice |
4 teaspoons | 20ml | Grated lemon peel - divided |
Preheat the oven to 400 degrees. Place the asparagus in a 9- by 13-inch baking dish.
In a small bowl, combine the butter, lemon juice, and 2 teaspoons of the lemon peel; mix well and pour over the asparagus. Bake for 20 to 25 minutes, or until desired tenderness.
Remove from the oven and sprinkle with the remaining 2 teaspoons lemon peel. Serve immediately.
This recipe yields 4 servings. Serving size: 6 to 8 asparagus stalks.
