Cream Of Cauliflower Soup Recipe - Cooking Index
8 oz | 227g | Low-fat low-sodium condensed |
Cream of chicken soup | ||
1 cup | 146g / 5.1oz | Finely-chopped cauliflower |
1 teaspoon | 5ml | Lemon juice |
1 | Carrot - diced | |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Dried dill weed |
Combine all the ingredients in a small saucepan and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes, or until the cauliflower is soft, stirring occasionally.
For a thicker soup, blend half of it and mix back into the original.
This recipe yields 2 servings. Serving size: 1/2 recipe.
