Caesar Dressing Recipe - Cooking Index
Most of us have a love-hate relationship with Caesar dressing love the flavor, hate the high fat content and the raw egg. This easy version eliminates all the negatives, deliciously. It will keep in the refrigerator up to 2 days, but each day the garlic will become a little more powerful. If you won't be using it immediately, use a half clove of garlic instead.
Courses: Salads1/4 cup | 36g / 1.3oz | Fat-free cottage cheese |
1 | Garlic clove - minced | |
2 tablespoons | 30ml | Grated Parmesan cheese |
2 tablespoons | 30ml | Lemon juice |
2 tablespoons | 30ml | Lite mayonnaise |
1 teaspoon | 5ml | Anchovy paste - (optional) |
1/2 teaspoon | 2.5ml | Dijon mustard |
In a food processor or blender, puree the cottage cheese and garlic until smooth. Add the Parmesan cheese, the lemon juice, mayonnaise, anchovy paste if using, and the mustard; pulse until smooth. Let stand 10 minutes to allow flavors to blend.
This recipe yields 8 servings. Serving size: 1 tablespoon.
