Pesto Recipe - Cooking Index
2/3 cup | 26g / 0.9oz | Fresh basil leaves - (tightly packed) |
3 | Scallions, including 2" green - chopped | |
1 | Garlic clove - minced | |
1 teaspoon | 5ml | Dry-roasted sunflower seeds |
Freshly-ground black pepper - to taste | ||
3 teaspoons | 15ml | Low-sodium fat-free chicken broth - (to 4) |
1/2 tablespoon | 7.5ml | Grated Parmesan cheese |
Place first 5 ingredients in a blender or food processor. Pulse on and off until finely minced.
Add the stock to thin the mixture. Stir in cheese.
This recipe yields 1/2 cup.
