| 2 cups | 474ml | Skim milk |
| 1 cup | 237ml | Low-calorie whipped cream |
| 3 | Macaroons - crushed | |
| 1 teaspoon | 5ml | Green cream de menthe |
| 2 tablespoons | 30ml | Toasted pistachio nuts |
Prepare the pudding mix according to package directions using skim milk. Refrigerate to set.
When the pudding is set, mix the whipped cream with the macaroons and cream de menthe. Layer the pudding and whipped cream mixture in parfait glasses. Garnish each glass with nuts and serve.
