Low-Fat Dijon Potato Salad Recipe - Cooking Index
Salad | ||
1 lb | 454g / 16oz | Red potatoes - unpeeled, cubed |
1/2 cup | 55g / 1.9oz | Diagonally sliced celery |
1/4 cup | 59ml | Sliced scallions |
2 tablespoons | 30ml | Chopped shallots |
Dressing | ||
1/2 cup | 118ml | Low-fat buttermilk |
2 tablespoons | 30ml | Low-fat mayonnaise |
1 tablespoon | 15ml | Dijon mustard |
1 tablespoon | 15ml | Tarragon vinegar |
In a medium-size pot, cover the cubed potatoes with water. Bring to a boil, lower the heat, and cook on medium heat until potatoes are tender, yet firm (about 15 minutes).
Toss cooked potatoes with celery, scallions, and shallots.
In a small bowl, combine all dressing ingredients. Add to the potato salad and mix well. Refrigerate until ready to serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
