Low-Fat Dijon Potato Salad

Recipe Ingredients

1 lb 454g / 16ozRed potatoes - unpeeled, cubed
1/2 cup 55g / 1.9ozDiagonally sliced celery
1/4 cup 59mlSliced scallions
2 tablespoons 30mlChopped shallots
  Dressing
1/2 cup 118mlLow-fat buttermilk
2 tablespoons 30mlLow-fat mayonnaise
1 tablespoon 15mlDijon mustard
1 tablespoon 15mlTarragon vinegar

Recipe Instructions

In a medium-size pot, cover the cubed potatoes with water. Bring to a boil, lower the heat, and cook on medium heat until potatoes are tender, yet firm (about 15 minutes).

Toss cooked potatoes with celery, scallions, and shallots.

In a small bowl, combine all dressing ingredients. Add to the potato salad and mix well. Refrigerate until ready to serve.

This recipe yields 6 servings. Serving size: 1/2 cup.
