Light And Fruity Cranberry Salad

Recipe Ingredients

1   Crushed pineapple - (8 oz) - drained,
  Reserving juice
1/2 cup 118mlOcean Spray Light Cran-Raspberry
  Raspberry cranberry juice drink
2 tablespoons 30mlLemon juice
1   Sugar-free raspberry flavored gelatin - (0.3 oz)
1   Ocean Spray whole berry cranberry sauce - (16 oz)
1/2 cup 55g / 1.9ozChopped celery

Recipe Instructions

Combine reserved pineapple juice, cranberry raspberry juice, and lemon juice in a medium saucepan. Bring to a boil. Remove from heat. Add gelatin, stirring until it is completely dissolved.

Break up cranberry sauce with a fork. Stir into gelatin mixture. Refrigerate until mixture begins to set.

Stir in pineapple and celery. Pour into a 4-cup mold. Chill until firm.

This recipe yields 8 servings. Serving size: 1/2 cup.
