Lemony Wheatful Fruit Bread Recipe - Cooking Index
Lemon lovers will be delighted with this easy quick bread made with shredded wheat cereal.
Courses: Breads1/2 cup | 99g / 3.5oz | Margarine - (1 stick) - melted |
1 cup | 237ml | Fat free milk |
2 | Eggs | |
Finely-grated peel from 1 lemon | ||
2 tablespoons | 30ml | Lemon juice |
1 cup | 198g / 7oz | Sugar |
2 cups | 125g / 4.4oz | Flour |
1 1/2 cups | 219g / 7.7oz | Post spoon-size shredded wheat cereal - finely crushed |
1 teaspoon | 5ml | Baking soda |
1/4 teaspoon | 1.3ml | Ground cinnamon |
1 cup | 110g / 3.9oz | Dried mixed fruit |
= (such as prune, apricot or pear) |
Mix margine, milk, eggs, lemon peel, juice and sugar in large bowl until well blended.
Stir in flour, crushed cereal, baking soda and cinnamon until blended.
Stir in fruit.
Spoon into 9- by 5-inch loaf pan, which has been sprayed with non-stick cooking spray.
Bake at 350 degrees for 50 minutes or until golden brown and cake tester inserted in center of bread comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Store in plastic wrap.
This recipe yields 12 servings. Serving size: 1 slice.
