Easy Bake Potato Bites

2 cups 292g / 10ozBaking potatoes - diced (medium)
1/2   Red onion - diced
2 tablespoons 30mlChopped or torn fresh cilantro or parsley
1 tablespoon 15mlOlive oil
1   Freshly-ground black pepper
1/4 teaspoon 1.3mlSalt

Recipe Instructions

Heat oven to 375 degrees. Combine all ingredients in a small bowl.

Spread on a nonstick baking sheet and bake 15 to 20 minutes.
