Sassy Potato Corn Chowder

Recipe Ingredients

4   Oscar Mayer bacon - chopped
3 cups 711mlCubed peeled potatoes - (abt 1 1/4 lbs)
1   Low-sodium chicken broth - (13 1/2 oz)
1   Frozen corn - (10 oz) - thawed, drained
1/2 cup 31g / 1.1ozChopped onion
1/2 cup 55g / 1.9ozSliced celery
2 tablespoons 30mlFlour
1/2 cup 118mlMiracle Whip Light salad dressing
2 cups 474ml2% milk

Recipe Instructions

Cook bacon in large saucepan until crisp; drain. Return to pan.

Stir in potatoes, broth, corn, onion, and celery. Bring to boil. Reduce heat to low; simmer 15 minutes or until potatoes are tender.

Mix flour and dressing. Stir in milk. Add to potato mixture. Continue cooking 3 to 5 minutes or until thoroughly heated. Sprinkle with additional bacon and parsley, if desired.

This recipe yields 6 servings. Serving size: 1/6 recipe.
