Sassy Potato Corn Chowder Recipe - Cooking Index
4 | Oscar Mayer bacon - chopped | |
3 cups | 711ml | Cubed peeled potatoes - (abt 1 1/4 lbs) |
1 | Low-sodium chicken broth - (13 1/2 oz) | |
1 | Frozen corn - (10 oz) - thawed, drained | |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 cup | 55g / 1.9oz | Sliced celery |
2 tablespoons | 30ml | Flour |
1/2 cup | 118ml | Miracle Whip Light salad dressing |
2 cups | 474ml | 2% milk |
Cook bacon in large saucepan until crisp; drain. Return to pan.
Stir in potatoes, broth, corn, onion, and celery. Bring to boil. Reduce heat to low; simmer 15 minutes or until potatoes are tender.
Mix flour and dressing. Stir in milk. Add to potato mixture. Continue cooking 3 to 5 minutes or until thoroughly heated. Sprinkle with additional bacon and parsley, if desired.
This recipe yields 6 servings. Serving size: 1/6 recipe.
