Potato And Onion Frittata

Recipe Ingredients

1 cup 237mlBaking potato - peeled, halved, (small)
  And sliced 1/8" thick - (abt 1/2 cup)
1/4 cup 15g / 0.5ozChopped onion
1   Garlic clove - minced
1   Freshly-ground black pepper
1 tablespoon 15mlFleischmann's Original margarine
1 cup 198g / 7ozEgg Beaters healthy real egg product

Recipe Instructions

In 8-inch nonstick skillet, over medium-high heat, saute potato, onion, garlic and pepper in margarine until tender.

Pour Egg Beaters evenly into skillet over potato mixture. Cook without stirring for 5 to 6 minutes or until cooked on bottom and almost set on top.

Carefully turn frittata; cook for 1 to 2 minutes more or until done. Slide onto serving platter; cut into wedges to serve.

This recipe yields 2 servings.
