Italian Baked Eggs Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
1/2 tablespoon | 7.5ml | Onion - minced (medium) |

3 | Egg whites | |
4 | Bacon - cooked crisp, | |
And crumbled | ||
1/2 cup | 73g / 2.6oz | Shredded low-fat cheese |
1 cup | 146g / 5.1oz | Fresh or frozen spinach - chopped |
1 teaspoon | 5ml | Italian herb seasoning |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Seasoning salt |
Heat the oven to 350 degrees. Heat the oil in a small skillet and saute the onion for 3 to 4 minutes.
Beat the eggs and egg whites and stir in all ingredients, including the onion. Pour mixture into a nonstick quiche pan. Bake for 20 minutes. Check with knife to assure the loaf is done throughout.
This recipe yields 4 servings. Serving size: 1 slice.
