Italian Baked Eggs

Recipe Ingredients

1 tablespoon 15mlOlive oil
1/2 tablespoon 7.5mlOnion - minced (medium)
4   Eggs
3   Egg whites
4   Bacon - cooked crisp,
  And crumbled
1/2 cup 73g / 2.6ozShredded low-fat cheese
1 cup 146g / 5.1ozFresh or frozen spinach - chopped
1 teaspoon 5mlItalian herb seasoning
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/2 teaspoon 2.5mlSeasoning salt

Recipe Instructions

Heat the oven to 350 degrees. Heat the oil in a small skillet and saute the onion for 3 to 4 minutes.

Beat the eggs and egg whites and stir in all ingredients, including the onion. Pour mixture into a nonstick quiche pan. Bake for 20 minutes. Check with knife to assure the loaf is done throughout.

This recipe yields 4 servings. Serving size: 1 slice.
