Charleston Gumbo

Traditional Southern farmers beat their okra with a stick to make it grow better. Try it: take a small branch and lightly smack each plant.

Recipe Ingredients

2   Bacon - diced
1 cup 62g / 2.2ozChopped white onion
4 cups 948mlSliced okra
1   Tomatoes - (32 oz)
  = (or 4 medium fresh tomatoes)
  Freshly-ground black pepper - to taste
1   Worcestershire sauce

Recipe Instructions

Fry the bacon and onion in a medium saucepan until browned. Drain off the fat, then add the remaining ingredients and simmer for 1 to 2 hours.

This recipe yields 6 servings. Serving size: 3/4 cup.
