Caesar Salad Sandwiches

This is a healthy alternative to sandwiches made with processed meats.

Recipe Ingredients

6   Hard rolls (preferably whole grain) (medium)
3 cups 711mlTorn romaine lettuce
1/2 cup 118mlFat-free Caesar salad dressing
1/3 cup 48g / 1.7ozGrated fresh Parmesan cheese
1 1/2 lbs 681g / 24ozChicken breasts - cut into strips
  About 3" long
2 teaspoons 10mlOlive oil

Recipe Instructions

Set the oven on broil. Cut each roll in half and scoop out the dough to form a pocket in one side of the bread. Combine the lettuce, dressing, and cheese in a bowl.

Place the chicken strips on a broiler pan and brush with the olive oil. Broil the strips of chicken for a total of about 7 minutes, turning once.

Add the chicken to the salad and pile the mixture into the bread pocket. Top with the other half of bread and serve.

This recipe yields 6 servings. Serving size: 1 (3-ounce) roll with 3 ounces chicken and 1/2 cup salad greens.
