Green Beans With Roasted Red Pepper And Walnut Oil

The nutty walnut oil really shines through and turns ordinary green beans into something extraordinary.

Recipe Ingredients

6 cups 960g / 33ozFresh green beans - trimmed
1 cup 146g / 5.1ozDiced roasted red pepper
  = (use from the jar)
2 tablespoons 30mlFresh lemon juice
1 teaspoon 5mlGrated lemon zest
2 teaspoons 10mlWalnut oil

Recipe Instructions

In a large pot of boiling water, add the green beans and blanch for 2 minutes. Drain and rinse the beans with cold water.

Add the beans to a bowl and add the remaining ingredients. Serve the green beans at room temperature.

This recipe yields 6 servings. Serving size: 1 cup.
