Elegant Leek Soup Recipe - Cooking Index
1 teaspoon | 5ml | Butter |
2 teaspoons | 10ml | Shallots - chopped (small) |
1 1/2 cups | 219g / 7.7oz | Chopped cleaned leeks (bottom only) |
1 cup | 237ml | Dry white wine |
2 cups | 292g / 10oz | Russet potatoes - peeled, diced (medium) |
2 cups | 474ml | Low-sodium low-fat chicken broth |
1 1/2 cups | 355ml | 1% milk |
1 1/2 cups | 355ml | Wagon wheel pasta |
2 tablespoons | 30ml | Crumbled blue cheese |
Melt the butter in a stockpot over medium-high heat. Add the shallots and leeks and saute for 10 minutes.
Add the wine, potatoes, and broth and bring to a boil. Lower the heat to medium and cook for about 15 minutes.
Add all the remaining ingredients, except the cheese. Heat through, but do not boil. Top each bowl with blue cheese.
This recipe yields 6 servings. Serving size: 1 cup.
