Cucumber And Mint Salad Recipe - Cooking Index
The earthy, fruity taste of extra virgin olive oil and cool mint makes this dish a very refreshing beginning to a great meal.
Courses: Salads6 cups | 1422ml | Thinly-sliced cucumber - unpeeled |
1 cup | 146g / 5.1oz | Green pepper - diced (small) |
3 | Green onions - sliced | |
1/4 cup | 23g / 0.8oz | Minced mint |
1/4 cup | 59ml | Fresh lemon juice |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Balsamic vinegar |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Combine the cucumbers, pepper, onions, and mint in a salad bowl.
In a separate bowl, whisk together the remaining ingredients. Toss with the vegetables and serve.
