Chicken And Mushroom Soup

A soup that is light enough to be a snack, yet flavorful enough to satisfy.

Recipe Ingredients

1   Low-fat low-sodium chicken broth
1 tablespoon 15mlLow-sodium soy sauce
1 cup 237mlSliced mushrooms - stems removed
1 tablespoon 15mlMinced scallions
1 tablespoon 15mlDry sherry
1/2 lb 227g / 8ozBoneless skinless chicken breasts - cubed 1/2" pieces

Recipe Instructions

Simmer all ingredients except the chicken in a saucepan over medium-low heat for about 10 minutes.

Add the chicken and simmer for 8 more minutes until chicken is cooked through.

This recipe yields 6 servings. Serving size: 1 cup.
