Bok Choy, Carrots And Green Beans Recipe - Cooking Index
1 teaspoon | 5ml | Peanut oil |
2 teaspoons | 10ml | Shallots - minced (small) |
2 teaspoons | 10ml | Carrots - sliced diagonally (medium) |
1 cup | 160g / 5.6oz | Cut-up green beans |
1 cup | 146g / 5.1oz | Chopped bok choy |
1/3 cup | 78ml | Low-fat low-sodium chicken broth |
1 tablespoon | 15ml | Lite soy sauce |
Heat the oil in a wok or skillet over high heat. Add the shallots and saute for 3 minutes. Add the carrots and stir fry for 3 minutes. Add the green beans and stir fry for 2 minutes. Add the bok choy and stir fry for 2 minutes. Add the broth and simmer for 2 minutes. Add the soy sauce and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
