Bok Choy, Carrots And Green Beans

Recipe Ingredients

1 teaspoon 5mlPeanut oil
2 teaspoons 10mlShallots - minced (small)
2 teaspoons 10mlCarrots - sliced diagonally (medium)
1 cup 160g / 5.6ozCut-up green beans
1 cup 146g / 5.1ozChopped bok choy
1/3 cup 78mlLow-fat low-sodium chicken broth
1 tablespoon 15mlLite soy sauce

Recipe Instructions

Heat the oil in a wok or skillet over high heat. Add the shallots and saute for 3 minutes. Add the carrots and stir fry for 3 minutes. Add the green beans and stir fry for 2 minutes. Add the bok choy and stir fry for 2 minutes. Add the broth and simmer for 2 minutes. Add the soy sauce and serve.

This recipe yields 6 servings. Serving size: 1/2 cup.
