Spicy Corn Salsa

Recipe Ingredients

2 cups 125g / 4.4ozCorn kernels
1/4 cup 36g / 1.3ozDiced ripe avocado
1/2 cup 31g / 1.1ozMinced red onion
2 tablespoons 30mlMinced seeded tomato
2 tablespoons 30mlMinced jalapeño pepper
2 tablespoons 30mlLime juice
2 teaspoons 10mlSugar
1 tablespoon 15mlRed wine vinegar

Recipe Instructions

Combine all the ingredients in a medium-sized bowl. Cover and refrigerate for 1 hour.

Serve with low-fat baked corn chips, pita bread or as a condiment for grilled chicken, fish or beef.

This recipe yields 6 servings. Serving size: 1/2 cup.
