Spicy Corn Salsa Recipe - Cooking Index
2 cups | 125g / 4.4oz | Corn kernels |
1/4 cup | 36g / 1.3oz | Diced ripe avocado |
1/2 cup | 31g / 1.1oz | Minced red onion |
2 tablespoons | 30ml | Minced seeded tomato |
2 tablespoons | 30ml | Minced jalapeño pepper |
2 tablespoons | 30ml | Lime juice |
2 teaspoons | 10ml | Sugar |
1 tablespoon | 15ml | Red wine vinegar |
Combine all the ingredients in a medium-sized bowl. Cover and refrigerate for 1 hour.
Serve with low-fat baked corn chips, pita bread or as a condiment for grilled chicken, fish or beef.
