Pistachio Pudding Dessert Recipe - Cooking Index

| Pudding mix - (4 oz) | ||
| 2 cups | 474ml | Skim milk |
| 1 cup | 237ml | Low-calorie whipped cream |
| 3 | Macaroons - crushed | |
| 1 teaspoon | 5ml | Green cream de menthe |
| 2 tablespoons | 30ml | Toasted pistachio nuts - for garnish |
Prepare the pudding mix according to package directions, using the skim milk. Set aside to set.
When pudding is set, mix the whipped cream with the macaroons and cream de menthe. Layer the pudding and whipped cream in parfait glasses. Top each glass with nuts.
This recipe yields 6 servings. Serving size: 1/2 cup.
