Black Beans And Rice Recipe - Cooking Index
1 teaspoon | 5ml | Olive oil |
1 teaspoon | 5ml | Onion - chopped (medium) |
2 | Garlic cloves - minced | |
3/4 cup | 120g / 4.2oz | Short-grain white rice |
1 1/2 cups | 355ml | Low-fat low-sodium chicken broth |
1 teaspoon | 5ml | Cumin |
1/4 teaspoon | 1.3ml | Cayenne pepper |
3 1/2 cups | 560g / 19oz | Black beans - drained |
In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
Add the chicken broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.
This recipe yields 6 servings. Serving size: 1/2 cup.
