Asparagus Vinaigrette Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Fresh asparagus |
1/3 cup | 78ml | Balsamic vinegar |
2 tablespoons | 30ml | Low-fat low-sodium chicken broth |
2 tablespoons | 30ml | Olive oil |
2 teaspoons | 10ml | Lemon juice |
2 tablespoons | 30ml | Dijon mustard |
1 tablespoon | 15ml | Minced parsley |
2 teaspoons | 10ml | Capers |
1 teaspoon | 5ml | Minced chives |
Snap off the tough ends of the asparagus. Steam the asparagus in a metal steamer or asparagus cooker over boiling water for 5 to 8 minutes until asparagus is tender crisp and bright green. Drain the asparagus and splash cold waster over it to stop the cooking process.
Combine the remaining ingredients and to make the vinaigrette. Pour the vinaigrette over the asparagus and serve.
