Three-Melon Soup

Recipe Ingredients

3 cups 711mlCubed seeded watermelon
3 tablespoons 45mlUnsweetened pineapple juice
2 tablespoons 30mlLemon juice
1/4   Cantaloupe melon
1/8   Honeydew melon

Recipe Instructions

Combine watermelon, pineapple juice and lemon juice in blender; process until smooth. Chill at least 2 hours or overnight.

Scoop out balls of cantaloupe and honeydew.

To serve, pour watermelon mixture into shallow bowls; garnish with cantaloupe and honeydew.

This recipe yields 4 servings.
