Refreshing Gazpacho

2 cups 474mlLow-sodium tomato juice
1   Fat-free reduced-sodium beef broth - (14 oz)
1   Reduced-fat condensed tomato soup - (10 3/4 oz)
1 1/2 cups 219g / 7.7ozPeeled and diced cucumbers
1 1/2 cups 219g / 7.7ozDiced green bell peppers
1 cup 110g / 3.9ozShredded carrots
1 cup 110g / 3.9ozDiced celery
1/2 cup 31g / 1.1ozSliced green onions
1/3 cup 48g / 1.7ozChopped fresh parsley
2   Garlic cloves - minced
1 tablespoon 15mlLime juice
2 teaspoons 10mlLow-sodium Worcestershire sauce
1/2 teaspoon 2.5mlSalt - (optional)
1/2 teaspoon 2.5mlDried oregano leaves
  Fat-free sour cream - for garnish
  Chopped fresh cilantro - for garnish

Recipe Instructions

Combine tomato juice, beef broth, soup, cucumbers, peppers, carrots, celery, green onions, parsley, garlic, lime juice, Worcestershire sauce, salt and oregano in large bowl. Chill at least 2 hours to blend flavors.

Top with sour cream and cilantro.

This recipe yields 4 servings.
