| 1 cup | 110g / 3.9oz | Shredded carrots |
| 1 cup | 110g / 3.9oz | Diced celery |
| 1/2 cup | 31g / 1.1oz | Sliced green onions |
| 1/3 cup | 48g / 1.7oz | Chopped fresh parsley |
| 2 | Garlic cloves - minced | |
| 1 tablespoon | 15ml | Lime juice |
| 2 teaspoons | 10ml | Low-sodium Worcestershire sauce |
| 1/2 teaspoon | 2.5ml | Salt - (optional) |
| 1/2 teaspoon | 2.5ml | Dried oregano leaves |
| Fat-free sour cream - for garnish | ||
| Chopped fresh cilantro - for garnish |
Combine tomato juice, beef broth, soup, cucumbers, peppers, carrots, celery, green onions, parsley, garlic, lime juice, Worcestershire sauce, salt and oregano in large bowl. Chill at least 2 hours to blend flavors.
Top with sour cream and cilantro.
