Zucchini Saute

Red onion gives this zucchini a sweetness that is irresistible.

Recipe Ingredients

1 tablespoon 15mlOlive oil
1 tablespoon 15mlRed onion - chopped (medium)
3 tablespoons 45mlZucchini - (abt 5 to 6 oz ea) - cut into rounds (medium)
1/4 teaspoon 1.3mlDried oregano
  Freshly-ground black pepper - to taste

Recipe Instructions

In a large skillet over medium heat, heat oil. Add onion, and saute until onion is translucent but not browned.

Add zucchini, cover, and simmer 3 to 4 minutes. Sprinkle with oregano and pepper, and serve hot.

This recipe yields 4 servings. Serving size: 1/2 cup.
