Zucchini Saute Recipe - Cooking Index
Red onion gives this zucchini a sweetness that is irresistible.
Type: Vegetables1 tablespoon | 15ml | Olive oil |
1 tablespoon | 15ml | Red onion - chopped (medium) |
3 tablespoons | 45ml | Zucchini - (abt 5 to 6 oz ea) - cut into rounds (medium) |
1/4 teaspoon | 1.3ml | Dried oregano |
Freshly-ground black pepper - to taste |
In a large skillet over medium heat, heat oil. Add onion, and saute until onion is translucent but not browned.
Add zucchini, cover, and simmer 3 to 4 minutes. Sprinkle with oregano and pepper, and serve hot.
This recipe yields 4 servings. Serving size: 1/2 cup.
