Zucchini And Peppers Recipe - Cooking Index
| 1 1/2 cups | 355ml | Zucchini slices | 
| 1 1/2 cups | 219g / 7.7oz | Diced red pepper | 
| 1/2 cup | 31g / 1.1oz | Diced onion | 
| 2 | Garlic cloves - minced | |
| 1 tablespoon | 15ml | Lemon juice | 
| 1 teaspoon | 5ml | Olive oil | 
| 1 teaspoon | 5ml | Chili powder | 
| 1/4 teaspoon | 1.3ml | Oregano | 
| Freshly-ground black pepper - to taste | ||
| 1 | Salt - (optional) | 
Steam together the zucchini, red pepper, onion, and garlic on top of boiling water, covered, for about 4 minutes. Drain.
Combine the lemon juice, oil, chili powder, oregano, pepper, and salt. Sprinkle over the cooked vegetables and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
