Oat Bran Muffins Recipe - Cooking Index
2 1/4 cups | 90g / 3.2oz | Uncooked Oat Bran cereal |
1/4 cup | 36g / 1.3oz | Chopped nuts |
1/4 cup | 40g / 1.4oz | Raisins |
2 teaspoons | 10ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
3/4 cup | 177ml | Skim milk |
1/3 cup | 78ml | Honey |
2 | Eggs - beaten | |
2 tablespoons | 30ml | Vegetable oil |
Preheat oven to 425 degrees. Coat 12 medium-size muffin cups with vegetable oil or line with paper baking cups.
In large bowl combine Oat Bran cereal, nuts, raisins, baking powder, and salt. Add remaining ingredients; mix just until dry ingredients are moistened. Fill prepared muffin cups almost full.
Bake 15 to 17 minutes or until golden brown. Serve warm.
Note: Oat bran is a terrific ingredient in foods for those with diabetes.
This recipe yields 12 servings. Serving size: 1 muffin.
