Lite Pecan Pie

Recipe Ingredients

  Crust
1 1/4 cups 182g / 6.4ozCrushed graham crackers
1 tablespoon 15mlLight margarine
1 tablespoon 15mlCold water
  Filling
3/4 cup 148g / 5.2ozEgg substitute
  Enough brown sugar substitute to
  Replace 1 cup of brown sugar
1/2 cup 99g / 3.5ozLight margarine - melted
1 teaspoon 5mlVanilla
2 cups 474mlPecan pieces

Recipe Instructions

Preheat oven to 350 degrees.

To prepare the crust, combine crushed graham crackers, margarine and water and press into the bottom and sides of a 9-inch pie plate. Bake crust for 5 minutes. Remove crust from oven and set aside.

To prepare filling, mix egg substitute, brown sugar substitute and melted light margarine. Add vanilla and mix. Add pecan pieces and mix.

Pour filling into crust and bake for 35 minutes at 350 degrees. Let cool and serve at room temperature.

This recipe yields 8 servings. Serving size: 1/8 of recipe.
