Herb And Lemon Rice

Recipe Ingredients

1/4 cup 59mlLow-fat low-sodium chicken broth
1   Garlic clove - minced
2 tablespoons 30mlMinced onion
1/4 cup 27g / 1ozMinced carrot
1 1/2 cups 240g / 8.5ozShort-grain brown rice
3 cups 711mlLow-fat low-sodium chicken broth
1 tablespoon 15mlMinced basil - (to 2)
2 teaspoons 10mlMinced parsley
1 tablespoon 15mlLemon juice
1/4 teaspoon 1.3mlLemon rind

Recipe Instructions

Heat the broth in a saucepan over medium-high heat. Add the garlic and onion and saute for 3 minutes. Add the carrot and saute for 3 minutes. Add the rice and saute for 2 minutes.

Add the broth, bring; to a boil, lower the heat, cover, and simmer until the water is absorbed, about 40 to 45 minutes. Add the remaining ingredients and serve.

This recipe yields 6 servings. Serving size: 1/2 cup.
