Herb And Lemon Rice Recipe - Cooking Index
1/4 cup | 59ml | Low-fat low-sodium chicken broth |
1 | Garlic clove - minced | |
2 tablespoons | 30ml | Minced onion |
1/4 cup | 27g / 1oz | Minced carrot |
1 1/2 cups | 240g / 8.5oz | Short-grain brown rice |
3 cups | 711ml | Low-fat low-sodium chicken broth |
1 tablespoon | 15ml | Minced basil - (to 2) |
2 teaspoons | 10ml | Minced parsley |
1 tablespoon | 15ml | Lemon juice |
1/4 teaspoon | 1.3ml | Lemon rind |
Heat the broth in a saucepan over medium-high heat. Add the garlic and onion and saute for 3 minutes. Add the carrot and saute for 3 minutes. Add the rice and saute for 2 minutes.
Add the broth, bring; to a boil, lower the heat, cover, and simmer until the water is absorbed, about 40 to 45 minutes. Add the remaining ingredients and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
