Healthy Potato Salad

For a nice change of pace, try making potato salad with other root vegetables, such as turnips or rutabagas.

Recipe Ingredients

2 teaspoons 10mlPotatoes - peeled, and (medium)
  Cut into 1/2" cubes
1   Hard-cooked egg - sliced
1/4 cup 27g / 1ozChopped celery
1/4 cup 36g / 1.3ozChopped bell pepper
1/4 cup 15g / 0.5ozChopped onion
2 tablespoons 30mlChopped pimento
1 tablespoon 15mlMustard
4 tablespoons 60mlLite mayonnaise

Recipe Instructions

Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm (be careful not to overcook!).

Drain and cool. Mix all ingredients together and chill before serving.

This recipe yields 4 servings. Serving size: 1/2 cup.
