Healthy Potato Salad Recipe - Cooking Index
For a nice change of pace, try making potato salad with other root vegetables, such as turnips or rutabagas.
Courses: Salads2 teaspoons | 10ml | Potatoes - peeled, and (medium) |
Cut into 1/2" cubes | ||
1 | Hard-cooked egg - sliced | |
1/4 cup | 27g / 1oz | Chopped celery |
1/4 cup | 36g / 1.3oz | Chopped bell pepper |
1/4 cup | 15g / 0.5oz | Chopped onion |
2 tablespoons | 30ml | Chopped pimento |
1 tablespoon | 15ml | Mustard |
4 tablespoons | 60ml | Lite mayonnaise |
Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm (be careful not to overcook!).
Drain and cool. Mix all ingredients together and chill before serving.
This recipe yields 4 servings. Serving size: 1/2 cup.
