Grilled Summer Squash And Zucchini Recipe - Cooking Index
Grilling the yellow squash and zucchini is a good way to bring out the flavor.

3 | Summer squash (small) | |
= (combination of zucchini and yellow) | ||
Basting Sauce | ||
1 | Garlic clove - minced | |
1/2 teaspoon | 2.5ml | Paprika |
1/2 teaspoon | 2.5ml | Cumin |
2 tablespoons | 30ml | Olive oil |
1 tablespoon | 15ml | Fresh lemon juice |
Halve each squash, but do not peel. Combine all ingredients for sauce.
To grill, place the squash on a rack over medium hot coals with the rack set 6 inches from the heat source. Baste with some of the sauce. Grill the squash about 5 minutes on each side, basting frequently with sauce. Serve.
This recipe yields 6 servings. Serving size: 1/2 small zucchini or squash.
