Green Beans With Tomatoes And Oregano Recipe - Cooking Index
Instead of green beans topped with the ubiquitous French-fried onions, enjoy some fresh-from-the-garden taste.

2 cups | 320g / 11oz | Green beans - trimmed, and |

1/4 cup | 59ml | Low-fat low-sodium chicken broth |
1 cup | 62g / 2.2oz | Tomato - seeded, diced (medium) |
1 tablespoon | 15ml | Minced fresh oregano |
1 tablespoon | 15ml | Minced parsley |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Heat the oil in a large heavy skillet over medium heat. Add the onion and garlic and saute for 3 minutes. Add the green beans and broth. Cover and steam for 3 to 4 minutes.
Add in the diced tomato, cover, and steam for 1 minute. Add in the oregano, parsley, salt, and pepper and steam for 30 seconds more.
This recipe yields 6 servings. Serving size: 1/2 cup.
