Green Beans With Tomatoes And Oregano

Instead of green beans topped with the ubiquitous French-fried onions, enjoy some fresh-from-the-garden taste.

Recipe Ingredients

2 teaspoons 10mlOlive oil
1/4 cup 15g / 0.5ozDiced red onion
2   Garlic cloves - minced
2 cups 320g / 11ozGreen beans - trimmed, and
  Cut into 1" lengths
1/4 cup 59mlLow-fat low-sodium chicken broth
1 cup 62g / 2.2ozTomato - seeded, diced (medium)
1 tablespoon 15mlMinced fresh oregano
1 tablespoon 15mlMinced parsley
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Heat the oil in a large heavy skillet over medium heat. Add the onion and garlic and saute for 3 minutes. Add the green beans and broth. Cover and steam for 3 to 4 minutes.

Add in the diced tomato, cover, and steam for 1 minute. Add in the oregano, parsley, salt, and pepper and steam for 30 seconds more.

This recipe yields 6 servings. Serving size: 1/2 cup.
